
Our Chefs
Chefs Patrick Freytag and Shaun Squire have both been cooking for us for over 10 years and always provide a truly creative menu.

Patrick
Having trained in his native Germany, Patrick moved to Scotland. After marrying an Oban lass he settled in the town and began work at the Manor House in 1988. Within 2 years he had obtained an AA Rosette Award, closely followed with a recommendation in the Michelin Guide. Both have been awarded annually ever since.
His reputation is well known both locally and with hotel guests resulting in a large volume returning to the Manor House to sample the delights of his cooking. He prides himself on using Scottish produce sourced locally as much as possible. Seafood and fish are purchased on a daily basis from Watts Fishmonger on Oban Pier and meats such as venison are all Argyll sourced.
Shaun

Shaun started his career in London working at Claridges, The Four Seasons at Inn on the Park and the Pied a Terre where he gained invaluable experience working alongside Richard Neat. After spending some time in Jersey, he then moved north, worked in Inverness before settling in the Oban area and has been at The Manor House since Feb. 2000.
Shaun is an exceptional chef who shows incredible knowledge and understanding of fine food and maintains extremely high standards both in preparation skills and presentation of his dishes.
